Sodium Pyrophosphate

Food-grade sodium pyrophosphate supplied in anhydrous and decahydrate forms. Chemical formula for anhydrous type is Na₄P₂O₇ with molecular weight 265.90 and CAS 7722-88-5; decahydrate formula is Na₄P₂O₇·10H₂O with molecular weight 446.10 and CAS 13472-36-1. All indicators comply with international food additive standards.
Physical Properties
Decahydrate sodium pyrophosphate appears as colorless or white crystals and crystalline powder; anhydrous type is uniform white powder. Both forms are freely soluble in water and insoluble in ethanol and other organic solvents. The aqueous solution presents stable alkalinity with strong chelating capacity for Cu²⁺, Fe³⁺, Mn²⁺ and other metal ions.
Food Application
Functions as a food quality improver, pH regulator, chelating agent, emulsifier and binder. It improves the water retention and tenderness of meat and aquatic products, stabilizes natural food pigments and prevents fat oxidation and deterioration. It is also applicable in the production of baking powder and cheese products.

Standard 25kg double-layer packaging structure. Inner polyethylene sealed bag prevents moisture absorption, outer high-strength woven bag ensures transportation safety.
Storage & Transportation Requirements
